Jinglebelle’s Pumpkin Pancakes


2c. flour
2tbsp sugar
4tsp baking powder
1tsp salt
1tsp cinnamon
1tsp nutmeg
1 1/2 c. milk
1 c. Pumpkin
4 eggs, seperated
1/4 c. melted butter

Sift together dry ingredients. Combine milk, egg yolks, butter, and Pumpkin, stir into dry ingredients until just blended. Beat egg whites until stiff and blend into batter. Pour onto hot oiled griddle, about 1/3c. at a time. Cook until tops bubble then turn and cook until the underside is done, about 3 minutes. Enjoy with a little powdered sugar, and a cup of eggnog!
